Small State Provisions: One of Greater Hartford’s Most Talked-About Bakeries

by Nick Gilham

Small State Provisions has become one of the most recognizable bakery brands in the Hartford region. What began as a small bread operation inside a home kitchen has grown into a widely respected artisan bakery known for long lines, exceptional bread, and a loyal following across central Connecticut. The business blends careful craft baking with a strong sense of community, which has helped it stand out in an increasingly crowded food scene in towns like West Hartford, Avon, and the surrounding Farmington Valley.

The Founders Behind the Bakery

The bakery was founded by Kevin Masse and his husband Michael, whose move to Connecticut ultimately set the stage for the business. The two met in 2009 through mutual friends while spending time on Fire Island and began dating shortly afterward. Their relationship progressed quickly, and they moved in together within about six months. In 2013 they exchanged vows in Central Park in New York City, surrounded by family and friends.

For several years their lives were rooted in New York. Eventually they decided to leave the city and relocate to Connecticut, settling in the Hartford area around 2016. The move marked the first time Kevin had lived outside New York, and it opened the door to new opportunities. What started as a personal reset for the couple would soon turn into the beginning of a new business.

From Home Baking to a Real Business

Small State Provisions began very simply. Kevin started baking bread at home, initially sharing it with friends and neighbors. The bread quickly gained a reputation for its flavor and quality, and people began asking if they could buy it. That early demand pushed the project beyond hobby status and encouraged the idea that the bread could become the foundation for a real business.

From the beginning, the focus was on traditional baking methods and carefully made products rather than large-scale production. The bakery emphasizes long fermentation, high-quality ingredients, and small batch techniques that allow flavor to develop naturally. The name Small State Provisions reflects both Connecticut’s nickname and the idea of thoughtfully prepared foods rather than mass-produced goods.

The GastroPark Chapter

The first real public step for the bakery came through GastroPark in West Hartford. GastroPark is an outdoor food hall concept built around food trucks and small vendors, and it gave the bakery a way to introduce its products to a wider audience. Selling bread there helped build awareness for the brand, and customers began traveling from surrounding towns specifically to pick up loaves and pastries.

The response from the community was strong. Lines became common, and the bakery developed a loyal customer base that appreciated both the quality of the products and the personal story behind the business. That momentum eventually led to the decision to open a larger space that could support full bakery production and a café environment.

The Avon Bakery and Café

The company later expanded into a dedicated bakery and café in Avon. The Avon location allowed Small State Provisions to move beyond its earlier pop-up style sales and offer a more complete experience. The space supports larger production while also providing a place where customers can sit, have coffee, and enjoy the bakery’s food on site.

Avon has become a hub for dining and local businesses in the Farmington Valley, drawing visitors from towns like Simsbury, Farmington, and Canton. The bakery fits naturally into that landscape, attracting customers who appreciate both quality food and the charm of Connecticut’s smaller town centers.

What Small State Provisions Bakes

Bread remains the centerpiece of the menu and the foundation of the bakery’s reputation. Naturally fermented sourdough loaves are among the most popular items and are known for their crisp crust and chewy interior. The bakery also produces a wide range of laminated pastries, including croissants and chocolate croissants, along with rotating seasonal pastries that often sell out quickly.

In addition to bread and pastries, the café offers breakfast and lunch items built around the bakery’s house breads. Sandwiches, coffee, and espresso drinks round out the menu and make the space feel more like a neighborhood café than a traditional bakery counter. The expanded offerings have helped bring in customers throughout the day rather than only during morning bakery hours.

A Community-Focused Bakery

While the quality of the food is central to the brand, the culture around the bakery has also played a major role in its growth. The founders frequently speak about the importance of community and about creating a space where customers feel welcome and connected. That philosophy shows up in the way the bakery interacts with its customers and staff, emphasizing hospitality and personal connection.

Kevin and Michael’s relationship is part of the broader story of the business, though it is not the sole focus of the brand. Their move to Connecticut, the risks they took starting a new venture, and the way they built the company together have shaped the identity of Small State Provisions. At the same time, the bakery’s success is also tied to the team they built and the community that supported them from the beginning.

A Connecticut Bakery Success Story

Today Small State Provisions operates as one of the most prominent artisan bakeries in the Hartford area. The Avon bakery and café serves as the primary location, while the brand’s roots remain closely tied to its early days selling bread in West Hartford. What started as a home baking project has grown into a destination bakery that draws customers from across the region.

The business continues to focus on the same core ideas that defined it from the beginning: careful craft, small batch baking, and a welcoming atmosphere. Those values have helped turn a small bread operation into a well-known Connecticut bakery with a strong reputation and an enthusiastic following.
